Almost 100 years ago Isadore Shlafman fled his native Russia. Among the few possessions he brought with him was a recipe, and Montrealers, as well as tourists to the city, are forever grateful. The recipe was for a simple yet divine hand-rolled, honey-water-boiled, wood-fire baked bagel. And so Fairmount Bagel came into being nestled between shops in a residential neighborhood in French Montreal in a quiet brownstone building - an old converted house with a wood fired oven in the back. Isadore passed the torch to his son Jack, who, in turn, passed it to his son, Irwin, who now runs the place with the same attention to detail at the Fairmount Avenue Bakery.
